About...

You will gain an internationally recognised qualification which demonstrates you have the skills, knowledge and abilities required to carry out specific professional cookery roles successfully.   

This course provides not only a great introduction to cookery as a profession, it also teaches you a valuable life skill.  It is ideal if you have a keen interest in cookery and may wish to pursue a career within the industry.  

You will learn from experienced chefs that have worked for years in some of Scotland’s finest establishments. You will learn some tricks of the trade in our well-equipped professional standard kitchens. We will teach you how to put ingredients to their best use, minimising waste and creating delicious products with just a few ingredients; what’s more you get to eat yourself!

Course content...

Units that will cover the basics in cooking and finishing bread & dough products – such as a baguettes, pizza, focaccia, as well as baking some cakes and pastries, preparing hot and cold sandwiches such as – burgers, paninis, wraps, preparing and cooking vegetables – soups, curries, stir fries, rice into risotto, fried rice dishes, braised rice and grains – salads, broths and more!

Whilst cooking in the kitchen following the rules you will also cover the health, hygiene and food safety aspects required for working in a professional kitchen.

Where you can go...

On successful completion of this programme, learners may progress onto SVQ Level 2 Professional Cookery units – this course can be studied full-time at North Highland College UHI or as a follow-on in the Senior Phase offering (after completion of SVQ Level 1)

Student will need to have achieved or be working towards SCQF Level 4 courses and demonstrate a keen interest in cooking.
