About...

You will gain units from an internationally recognised qualification which demonstrates you have the skills, knowledge and abilities required to carry out specific professional cookery roles successfully.

The units will focus on specific areas, techniques and skills taught at a level required for working in a Professional kitchen. This course is ideal if you have a passion for cookery and wish to pursue a career within the industry.

You will learn from experienced chefs that have worked for years in some of Scotland’s finest establishments and will learn some tricks of the trade in our well equipped professional standard kitchens. We will teach you how to be able to put ingredients to their best use, creating some showstoppers, along with well balanced flavoursome dishes.

Location UHI North Highland - Thurso or Dornoch Campus

Attend timetables classes at college or your school for all learning and assessments.

Course content...

You will focus on: 

  • increasing your skill level from what you have previously achieved, and complete units in bakery, vegetable preparation and knife skills 
  • preparing vegetables which will  be used in other dishes that you will learn to make using a variety of other ingredients 
  •  practising various techniques using your knife correctly and efficiently 

Where you can go...

On successful completion of this programme, you may progress onto other SVQ Level 2 Professional Cookery units.  

This course can be studied full-time at the UHI North Highland Thurso or Dornoch campus.

Entry requirements

You will need to have achieved or be working towards SCQF Level 5 courses and demonstrate a keen interest in cooking.   

You are expected to have achieved the SVQ1 Professional Cookery course.
